What is a Cookie Pie? 🍪🥧

Think of a cookie pie as the ultimate stuffed cookie. A thick layer of cookie dough is pressed into the pan to create a cookie crust, which is then filled with a rich, gooey centre. The filling is sealed beneath another layer of cookie dough, creating a soft cookie "lid" on top. As it bakes, the outside becomes golden and slightly crisp while the center stays creamy and indulgently gooey.

Every slice gives you three perfect layers: cookie crust, delicious filling, and a soft cookie top.
